Super Moist Roast Chicken
Ingredients:
| 1 | chicken, about 4 lbs (2 kg) | 1 |
| 1/3 cup | FRENCH’S® Classic Yellow® Mustard | 75 mL |
| 1 tbsp | vegetable oil | 15 mL |
| 1 clove | clove garlic, minced | 1 clove |
| 1 tbsp | chopped fresh thyme leaves | 15 mL |
| 1 1/2 tsp | chopped fresh rosemary | 7 mL |
| Salt & pepper to taste |
Directions:
1. REMOVE giblets and neck if present from chicken. Rinse chicken inside and out. Pat dry.
2. COMBINE remaining ingredients. Using fingers to separate skin from breast meat, spread about 1/2 of mustard mixture on the meat under the skin.
3. TIE legs together with string. Place chicken on a rack in roasting pan. Spread remaining mustard mixture on chicken to coat.
4. BAKE uncovered at 325 ° F (170 ° C) for about 1 3/4 hours.
5. TRANSFER chicken to a platter. Tent with foil and let stand 15 minutes before carving.
Tips:
The mustard mixture between the skin and meat not only adds flavour but keeps the meat moist as well.
Substitute 1 tsp (5 mL) dried thyme leaves and 1/2 tsp (2 mL) dried rosemary for the fresh herbs.
