Hula Chicken Salad With Orange Poppy Seed Dressing

Ingredients:

¼ cup FRENCH'S® Dijon Mustard 50 mL
½ cup orange juice 125 mL
1 tbsp olive oil 15 mL
1 tbsp grated orange peel 15 mL
1 tsp sugar 5 mL
1 tsp poppy seeds 5 mL
1 lb carved chicken fillets/strips 500 g
8 cup cut-up Romaine lettuce 2 L
3 cup cut-up fruit such as oranges, melon, strawberries, and pineapple. 750 mL

Directions:

COMBINE orange juice, mustard, olive oil, orange peel, sugar and poppy seeds; mix well. Reserve.

HEAT an electric grill pan or barbecue grill. Coat chicken with vegetable cooking spray. Grill chicken about 5 min. until no longer pink in center.

ARRANGE lettuce and fruit on salad plates. Top with chicken and serve with dressing.

To save time, purchase cut-up fruit and salad greens from the salad bar of your local grocer.
