Hula Chicken Salad With Orange Poppy Seed Dressing
Ingredients:
| ¼ cup | FRENCH'S® Dijon Mustard | 50 mL |
| ½ cup | orange juice | 125 mL |
| 1 tbsp | olive oil | 15 mL |
| 1 tbsp | grated orange peel | 15 mL |
| 1 tsp | sugar | 5 mL |
| 1 tsp | poppy seeds | 5 mL |
| 1 lb | carved chicken fillets/strips | 500 g |
| 8 cup | cut-up Romaine lettuce | 2 L |
| 3 cup | cut-up fruit such as oranges, melon, strawberries, and pineapple. | 750 mL |
Directions:
COMBINE orange juice, mustard, olive oil, orange peel, sugar and poppy seeds; mix well. Reserve.
HEAT an electric grill pan or barbecue grill. Coat chicken with vegetable cooking spray. Grill chicken about 5 min. until no longer pink in center.
ARRANGE lettuce and fruit on salad plates. Top with chicken and serve with dressing.
To save time, purchase cut-up fruit and salad greens from the salad bar of your local grocer.
