Golden Potato Salad

SERVINGS about 5 cups (1250 mL)

Ingredients:

2 lb red potatoes, cubed 1 kg
1/3 cup FRENCH'S® Classic Yellow® Mustard 75 mL
1/3 cup mayonnaise 75 mL
1/3 cup sour cream 75 mL
2 hard cooked eggs, peeled and chopped 2
1/2 cup diced celery 125 mL
2 tbsp diced red onion 30 mL
2 tbsp finely chopped fresh parsley 30 mL
to taste Salt and pepper to taste

Directions:

COOK potatoes in boiling salted water about 10 minutes until tender; drain and cool.

PLACE potatoes in bowl with remaining ingredients; toss to coat. Chill.

Tips:

White potatoes will work well too.
