Easy Dijon Roasted Potatoes

Ingredients:

1/4 cup FRENCH'S® Dijon Mustard 50 mL
1 1/2 lb small red or Yukon gold potatoes, quartered 2750 g
1/3 cup olive oil 75 mL
2 tsp dried rosemary, thyme or oregano leaves 10 mL
salt and pepper to taste

Directions:

PLACE potatoes in large baking dish.

MIX remaining ingredients. Drizzle over potatoes. Toss to coat.

BAKE at 425° F ( 220° C) for 30 to 40 minutes, stirring often until potatoes are tender.
