Chunky Chicken Salad
Ingredients:
| 1/3 cup | FRENCH'S® Honey Dijon Mustard | 75 mL |
| ½ cup | light sour cream | 125 mL |
| 3 tbsp | pineapple or apricot all-fruit spread | 45 mL |
| ½ tsp | salt | 2 mL |
| 3 cup | cubed, cooked chicken | 750 mL |
| ½ cup | chopped celery | 125 mL |
| 2 tbsp | minced red onion | 30 mL |
Directions:
BLEND sour cream, mustard, fruit spread and salt in large bowl.
STIR in chicken, celery and onion.
CHILL. Serve on lettuce leaves or whole wheat bread, if desired.
Tips:
To cook chicken, place 1 ¼ lbs. (625 g) boneless skinless chicken breasts in large saucepan with water to cover. Gently simmer about 15 min. until chicken is no longer pink in center. Drain and cool completely.
